ground cumin

ground black pepper

sea salt

1/4 teaspoon

vegetable broth

2 cups

(14.5 ounce) can diced tomatoes

frozen mixed vegetables

chopped fresh parsley

Directions

Step 1:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.

Step 2:

Add the carrots, celery, potatoes, bell pepper, thyme, oregano, smoked paprika, cumin, black pepper, and salt. Cook for 5 minutes, stirring occasionally.

Step 3:

Pour in the vegetable broth and diced tomatoes. Bring to a boil, then reduce the heat to low and simmer for 15 minutes.

Step 4:

Add the frozen mixed vegetables and simmer for an additional 10 minutes.

Step 5:

Stir in the parsley and serve. Enjoy!
