Wash and soak the Basmati Rice for 30 minutes.
Heat Ghee and Oil in a large pot over medium heat.
Add Bay Leaves, Cinnamon Sticks, Cardamom Pods, and Cloves. Fry for a few seconds.
Add Onion and fry until golden brown.
Add Garlic, Ginger, Coriander Powder, Cumin Powder, Turmeric Powder, Red Chili Powder, and Garam Masala. Fry for a few seconds.
Add Mixed Vegetables and fry for a few minutes.
Add Coconut Milk and Salt to taste.
Add the soaked Basmati Rice and mix well.
Add 2 cups of water and bring to a boil.
Reduce the heat to low and cover the pot. Cook for 15 minutes or until the rice is cooked.
Garnish with Fresh Coriander Leaves and serve hot.
