Soak the basmati rice in water for 30 minutes.
Heat ghee and oil in a large pot over medium heat. Add bay leaves, cinnamon sticks, cardamom pods, and cloves. Fry for a few seconds until fragrant.
Add the chopped onion and green chillies. Fry until the onion is golden brown.
Add the ginger-garlic paste and fry for a few more minutes.
Add the mixed vegetables and fry for a few minutes.
Add the red chilli powder, coriander powder, garam masala, cumin powder, and salt. Fry for a few more minutes.
Add the soaked basmati rice and mix well.
Add 4 cups of water and bring to a boil.
Reduce the heat to low and cover the pot. Simmer for 15 minutes or until the rice is cooked.
Add the fresh coriander leaves, mint leaves, cashew nuts, and raisins. Mix well.
Serve hot with raita or any other accompaniment of your choice. Enjoy!
