In a large bowl, mix together the flour, sugar, salt, and yeast.
Add the warm water and oil and mix until a soft dough forms.
Knead the dough for 5 minutes until it is smooth and elastic.
Cover the dough and let it rest for 1 hour.
In a separate bowl, mix together the mashed potatoes, cumin seeds, mustard seeds, coriander powder, red chili powder, turmeric powder, coriander leaves, green chilies, onion, and garlic.
Divide the dough into 8 equal portions.
Take one portion of the dough and roll it into a circle.
Place a spoonful of the potato mixture in the center of the circle.
Fold the edges of the circle over the potato mixture and pinch them together to form a ball.
Flatten the ball slightly and place it on a greased baking sheet.
Repeat with the remaining dough and potato mixture.
Heat the oil in a large skillet over medium heat.
Fry the vada pao in batches until golden brown on both sides.
Serve hot with chutney or ketchup. Enjoy!
