Torai Sabji is a popular curry in North India. It is made with a vegetable called tori, which is also known as ridge gourd. The vegetable is peeled and cut into thin slices, then cooked with spices such as cumin, coriander, turmeric, and chili powder. Other vegetables such as potatoes, onions and tomatoes are often added to this sabji for more flavour.The dish is usually served with chapatis or parathas.

Heat oil in a pan over medium heat.
Add cumin, mustard and fennel seeds and fry for a few seconds.
Add green chillies and onion and fry until onion is golden brown.
Add potatoes and fry for a few minutes.
Add turmeric powder, coriander powder, red chilli powder and garam masala and fry for a few more minutes.
Add salt and water and bring to a boil.
Reduce heat and simmer for 10-15 minutes or until potatoes are cooked.
Add fresh coriander leaves and mix well.
Serve hot with chapatis or rice.
