Wash and chop the spring onions into small pieces.
Heat oil in a pan and add cumin seeds, mustard seeds and fenugreek seeds.
When the seeds start to crackle, add the chopped spring onions and sauté for a few minutes.
Add turmeric powder, red chilli powder, coriander powder and garam masala.
Mix everything together and cook for a few minutes.
Add salt to taste and mix well.
Cook for a few more minutes until the spring onions are cooked.
Garnish with chopped coriander leaves and serve hot.
