Soak the sabudana in enough water for at least 4 hours.
Heat oil in a pan and add cumin seeds and mustard seeds.
When the seeds start to splutter, add the diced potatoes, green peas, carrots, green beans, bell pepper and onion.
Saute for a few minutes and then add the soaked sabudana.
Add turmeric powder, red chili powder and salt to taste.
Mix everything together and cook for about 10 minutes.
Add the peanuts and mix well.
Cook for another 5 minutes and then turn off the heat.
Add the lemon juice and chopped cilantro and mix well.
Serve the sabudana khichadi hot with your favorite accompaniment.
