Pulao is a popular one pot rice dish from the Indian subcontinent. It is also called as pilaf or pilau. It is made by cooking rice, typically long grain basmati rice,along with spices, vegetables, and sometimes meat or seafood. The spices used vary from region to region, but typically include cardamom, cinnamon, cloves, bay leaves, and cumin. Pulao is usually served with a side of raita, a yogurt-based condiment.

Wash and soak the Basmati Rice for 30 minutes.
Heat Ghee and Oil in a pressure cooker.
Add Bay Leaves, Cinnamon Sticks, Cardamom Pods and Cloves.
Add Cumin Seeds and Onion. Saute until the Onion turns golden brown.
Add Green Chillies, Ginger-Garlic Paste, Red Chilli Powder, Coriander Powder and Turmeric Powder. Saute for a few minutes.
Add Mixed Vegetables, Cashew Nuts and Raisins. Saute for a few minutes.
Add the soaked Basmati Rice and Salt. Saute for a few minutes.
Add Water and mix well.
Close the lid of the pressure cooker and cook for 2 whistles.
Once the pressure is released, open the lid and fluff the Pulao with a fork.
Serve hot with Raita or any Curry of your choice.
