In a bowl, mix together the crumbled paneer, onions, capsicum, tomatoes, red chilli powder, garam masala, cumin powder, turmeric powder, coriander powder, salt, coriander leaves and 2 tablespoons of oil.
In a separate bowl, mix together the whole wheat flour and enough water to make a soft dough.
Divide the dough into 8 equal portions and roll each portion into a small circle.
Place a portion of the paneer mixture in the centre of each circle and fold the edges to seal the filling.
Heat a non-stick pan and shallow fry the paranthas on both sides until golden brown.
Serve hot with curd or pickle.
