Soak the moong dal in water for 30 minutes.
Heat oil in a pan and add cumin seeds, mustard seeds and asafoetida.
When the seeds start to crackle, add the ginger-garlic paste and sauté for a few seconds.
Add the chopped spinach and sauté for a few minutes.
Add the turmeric powder, red chilli powder, garam masala and coriander powder and mix well.
Add the soaked moong dal and mix well.
Add 2 cups of water and salt to taste and bring to a boil.
Reduce the heat and simmer for 15-20 minutes or until the dal is cooked.
Garnish with chopped coriander leaves and serve hot.
