Rinse the split yellow lentils (toor dal) in a bowl and soak for 15 minutes.
Heat oil in a pressure cooker over medium heat. Add cumin seeds and let them sizzle.
Add the chopped onion and sauté until golden brown.
Add the ginger-garlic paste and sauté for a minute.
Add the chopped tomatoes and cook until they are soft and mushy.
Add the turmeric powder, red chili powder, coriander powder, and garam masala. Stir to combine.
Add the soaked lentils and stir to combine.
Add the chopped spinach and stir to combine.
Add 2 cups of water and salt to taste.
Close the lid of the pressure cooker and cook for 3-4 whistles.
Once the pressure is released, open the lid and stir the dal.
Add the lemon juice and chopped cilantro.
Serve hot with steamed rice or roti. Enjoy!
