Heat oil in a pan over medium heat.
Add cumin seeds, mustard seeds and fennel seeds and sauté for a few seconds.
Add turmeric powder, red chilli powder, coriander powder and garam masala and mix well.
Add onion, garlic, ginger and green chillies and sauté for a few minutes.
Add carrot, potato, green peas, cauliflower, French beans and capsicum and mix well.
Add salt to taste and mix well.
Cover the pan and cook for 10 minutes or until the vegetables are cooked.
Add chopped coriander leaves and mix well.
Serve hot with chapatis or parathas.
