Wash and soak the masoor dal in water for 30 minutes.
Heat oil in a pressure cooker. Add cumin seeds and let them crackle.
Add the ginger-garlic paste and sauté for a few seconds.
Add the chopped onion and sauté until it turns golden brown.
Add the chopped tomatoes and green chilies and sauté for a few minutes.
Add the coriander powder, turmeric powder, garam masala, red chili powder, amchur powder, and salt. Sauté for a few seconds.
Add the soaked masoor dal and 2 cups of water.
Close the lid of the pressure cooker and cook for 3-4 whistles.
Once the pressure is released, open the lid and add the kasuri methi and chopped cilantro.
Simmer for a few minutes and serve hot with steamed rice or roti.
