Cut the pomegranates in half.
Hold each half over a large bowl, cut side down, and tap the back with a wooden spoon so that the seeds fall out.
Place the seeds in a blender or food processor and pulse a few times to break them up.
Strain the juice through a fine-mesh sieve or cheesecloth into a jar or cup.
If desired, sweeten the juice with honey or sugar to taste, and add lemon juice.
Refrigerate the juice and serve it chilled.
