Golgappa is a popular Indian street food snack. It is also known as pani puri, puchka, or gupchup. It is a round, hollow puri, filled with a mixture of flavored water, tamarind chutney, chili, chaat masala, potato, onion or chickpeas.

In a large bowl, mix together the flour, baking powder, carom seeds, salt and oil.
Add water gradually and knead into a soft dough. Cover and keep aside for 15 minutes.
To make the stuffing, mix together the mashed potatoes, boiled chickpeas, onions, tomatoes, coriander leaves, chaat masala, red chilli powder, cumin powder and salt.
Divide the dough into small balls and roll out into thin discs.
Heat oil in a deep pan and deep fry the discs until golden brown.
Take the discs out of the oil and let them cool.
Once cooled, stuff the discs with the prepared stuffing.
Serve the golgappas with tamarind chutney, green chutney, sweet chutney, chopped onions, tomatoes, coriander leaves and chaat masala.
