Gobi Paratha is a popular Indian flatbread dish. It is made with a dough of whole wheat flour, salt, and water, and stuffed with a mixture of spiced cauliflower. In a large bowl, mix together the flour, salt, ajwain and oil.
Add enough water to make a soft dough. Knead the dough for 5 minutes until it is smooth and pliable.
Divide the dough into 8 equal portions.
Take one portion of the dough and roll it into a circle of about 4-5 inches in diameter.
Place the grated cauliflower, onion, green chillies and coriander leaves in the center of the circle.
Bring the edges of the circle together and seal the stuffing inside.
Flatten the stuffed dough ball and roll it out into a paratha of about 6-7 inches in diameter.
Heat a tawa or griddle over medium heat. Place the paratha on the tawa and cook for a few seconds.
Flip the paratha and drizzle some oil around the edges. Cook for a few more seconds.
Flip the paratha again and drizzle some more oil around the edges. Cook until both sides are golden brown.
Serve hot with yogurt or pickle. Enjoy!
