Gajar ka Halwa is a classic sweet dessert from India. It is made by cooking grated carrots in milk, sugar, and ghee, with a generous amount of dried fruits and nuts. Heat ghee in a pan and add the grated carrots. Saute the carrots for about 6-8 mins.
Add milk into the pan with the sautéed carrots and cook them together on a low flame.
Once the milk has reduced considerably and the carrots are cooked thoroughly, add sugar, cardamom powder, and the nuts.
Cook on a low flame until the halwa thickens and leaves the sides of the pan.
Gajar halwa is best served hot, garnished with nuts.
