Soak the Urad Dal in water for 4-5 hours.
Drain the water and grind the Urad Dal into a coarse paste.
Add the salt, baking soda, green chillies, ginger and coriander leaves to the paste and mix well.
Heat the oil in a deep pan and drop spoonfuls of the mixture into the hot oil.
Fry the vadas until they are golden brown and crisp.
Remove the vadas from the oil and drain on a paper towel.
In a bowl, mix together the yogurt, cumin seeds, red chilli powder, chaat masala, coriander powder, mango powder and black salt.
Dip the vadas in the yogurt mixture and serve.
