Soak the basmati rice in water for 30 minutes.
Heat ghee and oil in a large pot over medium heat.
Add bay leaves, cinnamon sticks, cardamom pods and cloves. Fry for a few seconds.
Add onions and green chillies. Fry until the onions are golden brown.
Add ginger-garlic paste, coriander powder, cumin powder, red chilli powder, garam masala and turmeric powder. Fry for a few minutes.
Add chicken and fry until it is cooked through.
Add yogurt, lemon juice and salt. Mix well.
Add the soaked basmati rice and mix well.
Add 2 cups of water and bring to a boil.
Reduce the heat to low and cover the pot. Cook for 15 minutes or until the rice is cooked.
Garnish with coriander leaves and mint leaves.
Serve hot with raita. Enjoy!
