Soak the basmati rice in water for 30 minutes.
Heat ghee and oil in a large pot over medium heat. Add bay leaves, cinnamon sticks, cloves and cardamom pods and fry for a few seconds.
Add the onions and fry until golden brown.
Add the ginger garlic paste, green chillies, coriander powder, cumin powder, red chilli powder, garam masala and turmeric powder and fry for a few minutes.
Add the chicken and fry until it is cooked through.
Add the yogurt, lemon juice and salt and mix well.
Add the soaked basmati rice and mix well.
Add 2 cups of water and bring to a boil.
Reduce the heat to low and cover the pot. Cook for 15 minutes or until the rice is cooked through.
Garnish with fresh coriander leaves and mint leaves.
Serve hot with raita or any other accompaniment of your choice.
