Heat the oil in a large skillet over medium-high heat.
Add the cumin seeds and let them sizzle for a few seconds.
Add the onion and garlic and sauté until the onion is softened and lightly browned, about 5 minutes.
Add the ginger, coriander powder, turmeric powder, garam masala, chili powder, and cayenne pepper. Stir to combine.
Add the cauliflower florets and stir to coat with the spices.
Reduce the heat to medium-low and cover the skillet. Cook for 10 minutes, stirring occasionally.
Uncover the skillet and cook for an additional 5 minutes, stirring occasionally, until the cauliflower is tender.
Add salt to taste and stir in the chopped cilantro.
Serve the cauliflower bhaji hot with chapati or rice. Enjoy!
