Wash and cut the brinjals into cubes.
Heat oil in a pan and add cumin seeds, mustard seeds and fenugreek seeds.
When the seeds start to splutter, add the brinjal cubes and sauté for a few minutes.
Add turmeric powder, red chilli powder, coriander powder and garam masala. Mix well.
Add the chopped green chillies, onion, tomatoes and coriander leaves.
Cook for a few minutes until the vegetables are cooked.
Add salt to taste and mix well.
Serve hot with chapatis or rice.
