Wash and peel the arbi and cut into small cubes.
Heat oil in a pan and add cumin seeds, mustard seeds and fennel seeds.
When the seeds start to crackle, add the arbi cubes and stir-fry for a few minutes.
Add turmeric powder, red chilli powder, coriander powder, garam masala, amchur powder and salt.
Mix everything together and cook for 10-15 minutes on low heat, stirring occasionally.
Once the arbi is cooked, turn off the heat and garnish with chopped coriander leaves.
Serve hot with chapati or rice. Enjoy!
