Peel and wash the arbi and cut into cubes.
Heat oil in a pan and add cumin seeds, mustard seeds and fenugreek seeds.
When the seeds start to crackle, add turmeric powder, red chilli powder, coriander powder, garam masala, amchur powder and salt.
Add the chopped coriander leaves, green chillies, ginger, garlic and onion.
Saute for a few minutes until the onion is soft.
Add the arbi cubes and mix well.
Cover the pan and cook on low heat for 10-15 minutes, stirring occasionally.
Serve hot with chapati or rice.
