Heat oil in a large pan over medium heat.
Add cumin, mustard and fennel seeds and fry for a few seconds.
Add turmeric, red chilli, coriander and garam masala powders and fry for a few seconds.
Add potatoes, onion, garlic, ginger and green chilli and fry for a few minutes.
Add green peas and fry for a few minutes.
Add boiled alu and fry for a few minutes.
Add salt and amchur powder and mix well.
Cook for a few minutes until the potatoes are cooked through.
Garnish with fresh coriander leaves and serve hot.
