In a large bowl, mix together the flour, salt and oil.
Add enough water to make a soft dough. Knead the dough for 5 minutes.
Cover the dough and let it rest for 15 minutes.
Divide the dough into 8 equal portions.
Take one portion of the dough and roll it into a circle of about 6 inches in diameter.
Place the rolled dough on a hot tawa.
Spread 1 teaspoon of ghee on the rolled dough.
Sprinkle the chopped onions, green chillies and coriander leaves on the rolled dough.
Cover the rolled dough with another rolled dough.
Cook the paratha on both sides until golden brown.
Serve hot with curd or pickle.
