Ingredients:

  • Sesame Oil: 2 tbsp
  • Kimchi (finely chopped): 1 cup
  • Hot pepper sauce: 2tbspn
  • Chicken broth: ½ cup
  • Udon noodles: 1 pound
  • Salt
  • Egg yolks: 4
  • Scallions ( thinly sliced): 3
  • Sesame seeds (toasted): 1 tbsp

Method:

  1. Heat 2 tbsp oil in a large pan
  2. Add chopped kimchi and hot sauce and cook while stirring occasionally 
  3. Add the broth when the kimchi becomes soft
  4. Cook until it reduces slightly
  5. Meanwhile, boil the noodles 
  6. Using tongs, transfer the cooked noodles and add the remaining oil.
  7. Cook while tossing
  8. Season with salt 
  9. Divide it into four bowls and top it off with the egg yolk, scallions and sesame seeds.
